Аннотация
Citric acid is a widely used organic acid with applications in food, pharmaceuticals, and industrial biotechnology. The most common method for its commercial production is fermentation using Aspergillus niger, a filamentous fungus with high citric acid yield. This paper discusses the biochemical mechanisms, fermentation conditions, process optimization, and industrial-scale production of citric acid with A. niger. Key factors such as carbon sources, pH, aeration, and metal ion concentrations significantly affect production efficiency. Advances in metabolic engineering and bioprocess innovations have further enhanced citric acid yields, making microbial fermentation the dominant production method.
