Аннотация
Polysaccharides produced by bacteria have diverse industrial and biomedical applications. One of the most important microbial polysaccharides is xanthan gum, which is produced by Xanthomonas campestris. Xanthan gum is widely used as a thickening, stabilizing, and emulsifying agent in industries such as food, pharmaceuticals, and cosmetics. This study explores the biosynthesis process, fermentation conditions, and factors influencing xanthan gum production. Additionally, the paper reviews its physicochemical properties, applications, and future prospects in biotechnology.
