Аннотация

Phytosterols, bioactive compounds with significant health benefits, have garnered considerable attention due to their cholesterol-lowering, anti-inflammatory, and antioxidant properties. This study focused on the extraction of phytosterols from Cydonia oblonga (quince) seeds, an underutilized source of these valuable compounds. The extraction process was optimized using solvent extraction techniques, and the phytosterol content was quantified using gas chromatography-mass spectrometry (GC-MS). The results revealed that quince seeds are a rich source of phytosterols, with β-sitosterol, campesterol, and stigmasterol being the predominant compounds.
