Аннотация
Watercress (Nasturtium officinale), an aquatic plant belonging to the Brassicaceae family, has attracted increasing attention due to its rich content of antioxidant molecules, including phenolic compounds, flavonoids, glucosinolates, and vitamins. These compounds exhibit potent biological activities such as free radical scavenging, anti-inflammatory, and anticancer effects. The pharmaceutical industry has shown growing interest in isolating these bioactive molecules to develop natural therapeutic agents and supplements. This paper reviews the chemistry and extraction of antioxidant molecules from watercress, the analytical methods used for their isolation and characterization, and their potential pharmaceutical applications. Challenges in scaling up and future perspectives on biotechnological production are also discussed.
