Аннотация
The valorization of agro-industrial by-products has emerged as a key strategy in sustainable development and circular economy frameworks. Grape residues, including skins and seeds generated during winemaking processes, are rich sources of bioactive compounds, particularly antioxidants such as polyphenols, flavonoids, and tannins. This study investigates various extraction techniques for recovering antioxidants from grape residues, focusing on efficiency, environmental impact, and scalability. Conventional and advanced extraction methods, including solvent extraction, ultrasound-assisted extraction (UAE), and supercritical fluid extraction (SFE), are evaluated. The findings demonstrate that optimized extraction conditions significantly enhance antioxidant yield while minimizing environmental impact, highlighting the potential of grape residues as a valuable resource in food, pharmaceutical, and cosmetic industries.
