Аннотация
Anthocyanins are naturally occurring water-soluble pigments belonging to the flavonoid group and are widely distributed in fruits, vegetables, and flowers. These compounds are responsible for the red, purple, and blue coloration observed in many plant species and possess significant antioxidant, anti-inflammatory, and antimicrobial properties. Among anthocyanin-rich plants, Rubus vulgaris has attracted considerable scientific interest due to its high phenolic content and potential applications in food technology, pharmaceuticals, cosmetics, and biomedical research. This article investigates the extraction of anthocyanins from Rubus vulgaris, focusing on the physicochemical properties of anthocyanins, extraction methodologies, optimization parameters, and practical industrial applications. The study also examines solvent selection, temperature influence, pH stability, purification methods, and storage conditions affecting anthocyanin yield and stability.
