Аннотация

Inulin, a prebiotic dietary fiber, is widely extracted from Cichorium intybus (chicory) due to its health benefits and industrial applications. This study explores the extraction techniques of inulin from chicory roots, focusing on factors affecting yield and purity. Various methods, including hot water extraction, ultrasound-assisted extraction, and enzymatic hydrolysis, are analyzed for efficiency and sustainability. The study also discusses the physicochemical properties of inulin, its applications in food and pharmaceutical industries, and its role in gut microbiota modulation. The findings highlight the importance of optimizing extraction parameters to maximize inulin recovery while maintaining its functional integrity.
